aka “Onion Pie a la Swiss”

4 strips bacon, diced
5 cups thinly sliced onions
1 cup grated swiss cheese
3 teaspoons sugar
1 Tablespoon Flour
1 teaspoons salt
Dash cayenne
¼ teaspoons black pepper
¼ teaspoons nutmeg
3 eggs
1 cup milk
1 9 inch unbaked pie shell – I never use… Just a large casserole dish
· Fry bacon until crisp;
· Sauté onions in bacon fat until soft and light yellow in color (I like to cook them until the water boils off)
· Add grated cheese
· Combine sugar and flour with seasonings and add to slightly beaten eggs
· Add milk to egg mixture and blend well.
· Place onions and bacon in pie shell
· Pour milk mixture over.
· Bake in oven pre-heated to 425 degrees for about 35 minutes or until custard is set and golden brown.
· Serve warm!
Allow over 1 hour prep + oven time = >95 minutes
