SUGAR-FREE APPLE OR PEAR CRISP

 

 

 

 

          1½ pounds apples or pears, peeled, cored, and thinly sliced

          3 Tablespoons all-purpose flour

          ¼ cup frozen unsweetened apple juice concentrate

          ½ teaspoon ground cinnamon

          Dash freshly ground nutmeg

          3 Tablespoons corn-oil margarine, softened

          10 graham cracker squares, crushed (¾ cup)

 

 

Preheat oven to 375°F.  In an 8-inch-square baking dish, toss the apples or pears with 1 Tablespoon of the flour.  Add the concentrated apple juice.  Coat well.

 

In a small bowl, combine the remaining 2 tablespoons flour and the spices with the margarine and mix until well blended.

 

Gradually stir in the graham cracker crumbs until the mixture resembles coarse crumbs.  Sprinkle evenly over the fruit.

 

Bake for 30 minutes or until the topping is lightly browned and the fruit is tender.

 

Makes 16 2-inch square servings
